FLEUR DE SEL
Harvested in the late afternoon during very dry weather on the west coast of France, Fleur de Sel crystals form on the surface of the œillets, and are delicately collected by salt marsh workers (a task traditionally for women, as men weren't thought to be delicate enough). A rare and beautiful sea salt, not to be used as part of the cooking process, instead, the perfect finishing salt.
